Elote (Mexican Street Corn)

Elote, or Mexican street corn, is street food at its best. Think corn on the cob, but better because its slathered with Mexican Cotija cheese and spices. So easy, yet so delicious.

Cook Time 15 minutes

Ingredients

  • 4 ears fresh corn
  • 2 tbsp 0% Greek yogurt (or Mexican crema)
  • 2 oz Cotija cheese
  • 1 tsp paprika
  • 1 tsp cayenne pepper
  • fresh cilantro, for garnish
  • lime, for garnish

Instructions 

  • Grill corn for 6-10 minutes, or until corn is tender and slightly charred.
  • Immediately remove corn from grill and smear on Greek yogurt. Sprinkle on paprika and cayenne. Top with crumbled Cotija cheese. Garnish with chopped cilantro and fresh lime juice. Serve immediately.
