Spiced Pineapple Galette

This Spiced Pineapple Galette is a rustic tart that features an all-butter crust filled to the brim with pineapples cooked with spices.

Ingredients

Galette Dough

  • 1 cup All-purpose flour
  • 1/3 cup unsalted butter, cold
  • 1 tbsp caster sugar
  • 1/4 cup ice water
  • 1/8 tsp salt

Spiced Pineapple Filling

  • 2 cups fresh pineapples, cubed*
  • 1/4 cup + 1 tbsp caster sugar
  • 1 tbsp maple syrup
  • 1/4 tsp corn starch
  • 1/4 tsp ground all spice
  • 1/8 tsp nutmeg
  • 1/4 tsp cinnamon
  • 1 tsp vanilla extract
  • salt
  • 1 egg, beaten

Instructions 

  • In a mixing bowl, whisk together flour, sugar, and salt. Cut cold butter into small pieces and add to flour mixture. Using your hands, press the butter into the flour mixture. The dough should begin to form clumps ranging from small pebbles to the size of a dime. Next, add ice water, a little at a time, and begin pressing the dough until it comes together.
  • Use your hands to knead the dough into a ball. Lightly dust your working surface with flour, then use a rolling pin to roll the dough until it forms a circle that's approximately 12x12 inches. Put dough on a baking sheet lined with parchment and place in fridge to cool, about 1 hour.
  • Make the pineapple filling by adding pineapples, sugar, maple syrup, nutmeg, cinnamon, ground all spice, cornstarch, and salt to a saute pan. Bring to a boil, then reduce to a simmer and cook for 10 minutes, until pineapples soften. Move to fridge to chill and allow sauce to thicken, about 30 min to 1 hour.
  • Preheat oven to 375 degrees F.
  • Assemble the galette. Scoop chilled pineapple filling into center of the galette dough. Gently fold the outer edges of the dough inward, forming pleats. Brush the dough with egg wash, then sprinkle 1 tbsp sugar on top.
  • Bake the galette for 45-55 minutes, until crust is golden brown. Serve warm with a scoop of ice cream.

Notes

*You can substitute canned pineapples for this recipe, just cook on stovetop with spices for 5 minutes instead of 10.
