15-6lbseedless watermelon, diced with rind removed
8cupscoconut water
1tbspcane sugar optional
Instructions
Working in batches, add watermelon, enough coconut water to cover the watermelons, and sugar (optional) to a high powered blender. Blend on high until watermelon is completely dissolved. (I worked in 3 batches).
Pour watermelon juice through a fine mesh strainer and into a pitcher. Refrigerate for at least 1 hour before serving. Watermelon juice can last covered in the fridge for up to 5 days.
NOTE: For a fancy drink, add sparkling water or champagne right before serving. Top with a squeeze of fresh lime juice.
