Trini Grilled Salmon
- 4 salmon fillets
- 1 tbsp paprika
- 2 tsp garlic powder
- 2 tbsp Real Trini Curry Sauce (SEE NOTES for substitution)
- 2 tbsp neutral cooking oil
- salt and pepper
Cilantro Lime Rice
- 4 cups cooked white rice (short grain works well)
- 2 tbsp fresh cilantro, finely chopped
- juice and zest of 1 lime
- salt and pepper
Preheat grill or oven.
Place cleaned salmon into a large bowl. Add dry seasonings and curry sauce. Rub the seasonings into the salmon to make sure each fillet is evenly coated. Let the salmon marinate while you prepare the rice.
To prepare the cilantro lime rice. Mix rice, chopped cilantro, lemon juice and lemon zest Add salt and pepper to taste. It is best to add the seasoning when the rice is warm (not hot), so it can absorb the flavor. Fluff with a fork and set aside.
Grease grill or baking tin with oil. Cook salmon for 3-4 minutes per side, depending on the thickness. Salmon is done when the center is no longer translucent.

SUBSTITUTION: Instead of the Real Trini Curry sauce, you can make your own Green Seasoning by following this recipe, and add 2-3 tbsp of hot (or mild) curry powder.
