Use a spoon to scrape skin off ginger. Slice and use the back of the spoon to lightly beat the ginger and release some of the juices.
Add ginger and water to a saucepan and bring to a boil. Cover the saucepan. Turn off the stove and let tea steep for 5 minutes. Steep longer for a stronger tea. Stir in honey. Pour tea into two mugs and garnish each cup with a slice of lemon. Enjoy!
