This is the first recipe after the official launch of the new website! Yay!! and I am so excited! It has been a long journey to get to this point, but I’m really happy with how it turned out. I couldn’t have done it without Jacinta and the Social Circle crew! They are so talented and amazing to work with.

Getting a new website is a big deal. My first site was one I made myself, and while it will always have a special place in my heart, I have no clue how to implement some of the things I really wanted on the site. Like a full fledged Recipe Index. Now, you can search all the recipes from the site in one place, and you can filter by meal type, cuisine, ingredients, and so much more! Another great feature is the recipe card and comment section. It’s so much easier to save, print, and share recipes, and to comment on posts! I really hope you all comment on the posts to let me know how you’re enjoying the recipes.

I could go on and on about all the things I love about the site, like our logo, how streamlined the mobile site is, and the new page with all my favorite kitchen products, but I need to get back to today’s recipe.

Cocktails are for celebrating

I figured a pineapple cocktail is a perfect way to celebrate this new website launch, and this Pineapple Mint Smash is simple and delicious.

Pineapple Mint Smash | Sweet & Sorrel

Start with fresh lime wedges, mint and sugar. Muddle the ingredients together with a wooden spoon, then add pineapple juice, a splash of tequila and some fizzy sparkling water. And that’s it! So easy and so good.

To make things even fancier, I lined the rim with a lime and sugar mix. Totally optional, but it makes the glass look so pretty.

Celebrations also require mocktails

It’s so easy to turn this Pineapple Mint Smash cocktail into a mocktail. Instead of tequilia, add ginger ale or coconut water. You’ll get great flavor and lots of fizz. What’s a mocktail without a little fizz?!

Pineapple Mint Smash

A quick and refreshing summer cocktail is always a hit. Fresh lime muddled with mint, pineapple juice, tequila, and a splash of sparkling water.

Ingredients

  • 1 lime, cut into wedges
  • 1/3 cup fresh mint
  • 2 tbsp cane sugar
  • 1/2 cup pineapple juice
  • 4 oz tequila (or ginger ale or coconut water)
  • 4 tbsp sparkling water

Lime Salt

  • zest of 1 lime
  • 1/4 cup granulated sugar
  • 2 tbsp coarse salt

Instructions 

  • Make the lime salt by combining lime zest, sugar, and coarse salt on a plate. Set aside.
  • In a large glass or a cocktail shaker, muddle the lime, mint and sugar. Add the pineapple juice and tequila. Top with sparking water. Add ice and shake or stir until combined.
  • Run a lime wedge around the rim of each cocktail glass, then dip in the lime salt. Strain beverage into cocktail glass and fill with crushed ice. Top with fresh mint. Enjoy!
