Today’s Roasted Sweet Potatoes recipe is really special to me because 1) my mom makes it all the time, and if my mom makes it, trust me, it’s AMAZING! and 2) it’s the first recipe on the blog for 2020!!

This simple recipe for Roasted Sweet Potatoes screams comfort food. Topped with a drizzle of honey and fresh herbs, this dish is a healthy way to say hello to the New Year.

So sweet potatoes. Exciting stuff right?! Most Americans only think of sweet potatoes as that orange vegetable that’s served at Thanksgiving, but they are so much more! In Jamaica, our sweet potatoes aren’t orange (gasp!) and we eat them year round in a variety of different forms. When my family moved to America, we couldn’t find the same variety of sweet potatoes we used to eat, so we started experimenting. We tried everything from Japanese purple sweet potatoes to Hispanic white and yellow sweet potatoes, but my favorite is still the good ‘ole orange sweet potato.

Like I said before, this recipe is one of my mom’s staples. She often cuts sweet potatoes into rounds and bakes them along with plantains and other vegetables in our handy little toaster oven.

These roasted sweet potatoes are baked skin-on, because it’s how my mom makes them, it’s faster than peeling the potatoes first, and I think it adds great flavor. Plus, I’m convinced it helps to keep the potatoes from browning too quickly in the oven. After about 40 minutes in the oven, the potatoes are ready to get a nice helping of honey (or agave!) and fresh herbs– my favorites are thyme and parsley, but rosemary or sage also work great. And that’s literally it!

Roasted Sweet Potatoes

Oven roasted sweet potato rounds with honey and fresh herbs.
Prep Time 15 minutes
Cook Time 40 minutes

Ingredients

  • 4 sweet potatoes
  • 1 tbsp extra virgin olive oil
  • coarse salt and pepper
  • 1 tbsp honey or agave
  • fresh parsley finely chopped
  • fresh thyme finely chopped

Instructions 

  • Preheat oven to 400 degrees.
  • Wash and clean sweet potatoes, keeping the skin on. Cut sweet potatoes into 1" rounds, then place on baking sheet and drizzle both sides with olive oil, salt and pepper.
  • Roast sweet potatoes in the oven for 20 minutes, then flip and roast for another 20 minutes.
  • Remove sweet potatoes from oven and drizzle with honey or agave. Top with fresh herbs. Serve immediately.

    These were the PERFECT snack! I’d never thought to put honey on my sweet potatoes, and wow. What a game changer. I also topped some with cinnamon-sugar, hummus, & avocado. Her method of roasting makes the perfect neutral, roasted flavor so you can customize the sweet potatoes with either sweet or savory topping. DEFINITELY will be making these again. Thank you <3
