Make the lime salt by combining lime zest, sugar, and coarse salt on a plate. Set aside.
In a large glass or a cocktail shaker, muddle the lime, mint and sugar. Add the pineapple juice and tequila. Top with sparking water. Add ice and shake or stir until combined.
Run a lime wedge around the rim of each cocktail glass, then dip in the lime salt. Strain beverage into cocktail glass and fill with crushed ice. Top with fresh mint. Enjoy!
