- 4 sweet potatoes
- 1 tbsp extra virgin olive oil
- coarse salt and pepper
- 1 tbsp honey or agave
- fresh parsley finely chopped
- fresh thyme finely chopped
Preheat oven to 400 degrees.
Wash and clean sweet potatoes, keeping the skin on. Cut sweet potatoes into 1" rounds, then place on baking sheet and drizzle both sides with olive oil, salt and pepper.
Roast sweet potatoes in the oven for 20 minutes, then flip and roast for another 20 minutes.
Remove sweet potatoes from oven and drizzle with honey or agave. Top with fresh herbs. Serve immediately.
